Bircher Muesli

During a recent trip to Melbourne I had the most delicious Bircher Muesli - oats soaked in apple juice, combined with creamy yoghurt, tangy grated apple and sweet mangos. I thought I would attempt to recreate this dish at home and was pleasantly surprised with the outcome. This is such a tasty, nutritious breakfast that is a great alternative to porridge during the summer months.



Serves 2
Ingredients:
1 cup rolled oats
1 tablespoon sultanas
¾ cup apple juice
3 heaped tablespoons plain unsweetened yoghurt
1 apple
Small handful of almonds
1 cup fruit (I used frozen blueberries that I defrosted for 30 minutes beforehand)
Method:
1. Place the rolled oats and sultanas in a bowl, pour over apple juice and mix well. Cover and refrigerate the mixture overnight.
2. The next morning, remove oats from the fridge and mix through the yoghurt. Feel free to add more or less yoghurt to reach your desired consistency.
3. Coarsely grate the apple and mix into the oats.
4. Divide the muesli between two bowls, top with extra yoghurt, roughly chopped almonds and fruit. Enjoy!
